In a small bowl, mix together soy sauce, mirin, oyster sauce, toasted sesame seed oil, and sesame seeds. If you don't have Mirin, can substitute it for 1 Tbs rice vinegar with 1/2 tsp sugar or try it with 1 Tbs dry white wine with 1/2 tsp sugar instead. Although white wine won't exactly give the same taste as Mirin does, it will still give it an extra added layer of flavor.

In a large skillet, heat 1 Tbs oil over medium-high heat. Add in pre-shredded coleslaw mix, snap peas, and sliced green onions, reserving about 1 Tbs of the sliced green onions on the side for garnishing when serving. Continue sauteeing for about 1-2 minutes until cabbage starts to wilt, stirring frequently. Next, stir in minced garlic, again stirring frequently. Continue to cook for about 20-30 seconds. Then add in prepared sauce and stir to combine.
Make room in the center of the skillet for 2 ramen cakes by pushing veggies to the sides. Add in water and ramen noodles side by side. Cook noodles on one side for 2 minutes. Flip ramen and continue to cook noodles for an additional 1 minute. Loosen up noodles and toss with veggies, continuing to cook until noodles are soft and cooked through, about 1-2 minutes more.
Serve immediately and garnish with sprinkled sesame seeds and sliced green onions. So much flavor, for something that is so simple to make. Couldn't ask for anything more!

In addition, try serving on the side with grilled steak or any of your favorite cooked meats. Or try marinating 1 lb of thinly sliced chicken or pork in a medium sized bowl or in a large plastic ziploc baggie with 1/4 cup soy sauce for about 10 minutes prior to making the noodles. Saute the meat with 1 Tbs oil over medium-high heat as the first step until cooked through, and then add in coleslaw mix and continue with remaining recipe. Happy eating!
