Heat large pot to medium heat with 1 Tbs olive oil. Add sausage, break apart with a wooden spoon into crumbles, cook until browned and cooked through. Use slotted spoon and transfer sausage to a plate lined with paper towel, set aside.
To the same pot, add onions, cook until translucent stirring occasionally. Add red pepper flakes and garlic. Cook until fragrant, about 1 minute.
Add chicken broth, potatoes, salt and pepper. Bring to a boil. Reduce heat to low to medium-low and simmer until potatoes are tender, about 10-15 minutes. To check if potatoes are done, try pressing a potato cube against the side of the pot using the back of a spoon. It should be soft and easily mash between the spoon and the side of the pot.
Stir in kale, heavy cream, and reserved sausage. Stir well and bring to a light boil. Season with salt and pepper to taste if needed, then remove from heat.
