Enjoy these quick and Easy Homemade Fluffy Pancakes for breakfast anytime. These pancakes are light and airy cooked to a beautiful golden brown. They are made with simple ingredients that almost everyone already has on hand. Make an extra batch and place them in the freezer in a ziploc baggie. Just pop them in the microwave for a minute or so from the freezer, top it with some butter and maple syrup, and you’ve got a scrumptious and filling breakfast when you are short on time. Add additional toppings like fresh berries, whipped cream, chocolate sauce, and/or sprinkles. Never buy pancake mix again, this recipe is so simple, anyone can make them. No extra added ingredients that you would get with store bought pancake mix.

How to Make these Easy Homemade Fluffy Pancakes

Preheat electric griddle or pan over medium heat, 350-375F. Drop a few droplets of water on top of the surface, if the water sizzles, it is ready.

Sift flour, white sugar, baking powder, and salt together into a large bowl.

If Buttermilk Pancakes are striking your fancy, just swap out whole milk for buttermilk if you have it on hand. Or make your own buttermilk, just add 1 1/2 Tbs of white vinegar to the 1 1/4 cup whole milk, let it sit 5-10 minutes before mixing into the batter.

Make a well in the center of the flour mixture. Add milk, melted butter, and egg. Mix ingredients using a whisk or fork until just combined. Do not overmix, you want the batter to be slightly lumpy. If mixed too much, pancakes will turn out flat and dense after cooking.

  • Optional: Gently fold in any extra add-ins such as sliced bananas, strawberries, blueberries, chocolate chips, or any other delicious fresh fruits or savory add-ins that come to your mind.

Using a 1/4 cup measuring cup or a ladle, scoop the batter onto the griddle. Cook until bubbles start to appear on top and edges start to become dry, approximately 3-4 minutes. Flip each pancake and continue to cook on the other side, approximately 1-2 minutes. Repeat with the remaining batter.
