Soft and chewy mint chocolate chip cookies with slightly crisped edges, infused with peppermint oil and chocolate chips. These delightful treats give a nice cool refreshing twist to complement the sweetness and richness of a chocolate chip cookie. This tastes just like a crème de menthe chocolate but as a warm delectable cookie. They are chewy and soft with a nice slight crispiness on the outside that gives it that perfect texture. There is nothing better than a warm, fresh mint chocolate chip cookie straight out of the oven. Oh, those melty and gooey chocolate chip pieces with a refreshing minty taste, so good!

How to Make These Mint Chocolate Cookies

Gather all the ingredients. Preheat the oven to 350F. Line a cookie sheet pan with nonstick parchment paper.

In a large bowl, sift together the dry ingredients – flour, baking soda, and salt.

In a separate large bowl, cream together softened butter and brown sugar for about 2 minutes on medium-high speed using a hand or stand mixer. Start speed on low at first to keep the ingredients in the bowl, and then increase to medium-high once the butter and sugar has started to mix together.

Add in eggs, peppermint oil, and green food coloring to wet ingredients. Continue to beat for 1 more minute or until the food coloring is mixed in.

Using a spatula or large wooden spoon, gently fold in the dry ingredients until combined. Stir in chocolate chips.

Drop dough by tablespoons, 2 inches apart onto prepared pan.

Place in preheated oven for 10-12 minutes until the cookies are set and slightly browned on edges. Do not overbake. Let cool for a few minutes on the sheet pan before transferring them to a wire rack to finish cooling. Feel free to get first dibs on your mint chocolate chip cookies before letting everyone know that they are done. “Quality control,” right?! Mmmm, so refreshing.

  1. Preheat the oven to 350 degrees F (175 degrees C). Line a sheet pan with nonstick parchment paper.

  2. Sift flour, baking soda, and salt together in a large bowl. Set aside.

  1. In a separate large bowl, cream softened butter and brown sugar together using a hand or stand mixer on medium-high speed for 2 minutes. Start with slow speed until it starts to incorporate and then increase to the medium-high to finish up.

  1. Add eggs, peppermint oil, and 8 drops of green food coloring to the wet ingredients. Continue to beat on medium-high for 1 more minute scraping sides of bowl with rubber spatula. The food coloring should be fully mixed in.

  1. Gently fold in flour mixture to the wet ingredients until combined. Stir in chocolate chips.

  1. Drop by tablespoons onto prepared sheet pan. 

  1. Bake on the center rack of the oven for 10-12 minutes or until edges and tops start to become slightly browned. Let cookies cool for a few minutes on a sheet pan before transferring them to a wire rack to finish cooling.

  • Store in airtight container at room temperature for up to 5 days.
