Anyone can make this quick and easy Homemade Fresh Strawberry Sauce to top any of your favorite desserts or breakfast goodies. Have this perfectly sweetened yummy strawberry topping ready in 10 minutes to top your ice cream, cheesecake, strawberry shortcake, pancakes, or waffles. Substitute strawberries for any other berries such as blueberries, raspberries, or even cherries. Cut the cherries in half and remove the seeds before simmering.

Using fresh strawberries is always best, but if they are not in season, frozen strawberries will work too. No need to thaw them out, just place in the pot directly from the freezer. Fresh lemon juice is always ideal as well if available. Freshly squeezed lemons offer more of a vibrant flavor without any of those extra additive ingredients that are used to increase shelf life.

  • 1 lb fresh strawberries, hullled and sliced in half
  • 1/3 cup granulated sugar
  • 3 tsp fresh lemon juice
  • 1 tsp cornstarch
  • 1 tsp vanilla extract

Combine sliced strawberries and sugar in a medium sized pot or saucepan. In a small bowl, whisk together lemon juice, cornstarch and vanilla extract until smooth. Pour overtop the strawberries and mix with wooden spoon or rubber spatula until combined.

Bring to a boil over medium-high heat stirring frequently, and then reduce heat to medium-low and simmer for 5-10 minutes until berries are softened and juices have thickened. Top any of your favorite desserts or breakfast treats for an extra added layer of yumminess!

As for the chunkiness of the strawberries, it is up to you how big the slices are. The strawberries can be cut into thinner slices or quartered. If you are wanting more of a smooth consistency, pour the sauce into a blender once the sauce has cooled slightly and blend for a few pulses until the consistency you are looking for is achieved. Or use a potato masher to mash up some of the berries if you want to keep some texture in your sauce.

Note

  • Substitute strawberries with any other berries such as blueberries, raspberries, or even cherries. Before placing the cherries in the pot, slice them in half and remove the seeds.
  • Fresh strawberry sauce will keep in an airtight container in the fridge for up to 7 days.
