Ground Turkey Zucchini Skillet

An easy weeknight meal is always a must in all of our busy lives. Healthy and delicious ground turkey zucchini skillet can make it to your dinner table in less than 30 minutes. Try adding sliced mushrooms in with the veggies for an extra earthy flavor. Serve this lean protein and nutritious veggies on top of rice or your favorite pasta.

Ground Turkey Zucchini Skillet

Gather all your ingredients.

  • 1 lb ground turkey
  • 1 Tbs oil
  • 1 medium onion, diced
  • 2 medium zucchini, sliced into half moons
  • 1 bell pepper, chopped in 1/2 -1 inch pieces
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 12 tsp dried rosemary
  • 12 tsp dried thyme
  • 12 tsp smoked paprika
  • 14 tsp red pepper flakes
  • 2 cloves garlic, minced
  • 2 Tbs tomato paste
  • 12 cup water
  • 2 cups fresh spinach
  • salt and pepper, to taste

Heat a large deep sided skillet over medium-high heat with 1 Tbs oil. Add in ground turkey and break apart into crumbles using a wooden spoon. Season with salt and pepper and cook until browned and no longer pink inside.

I like to use avocado oil in a lot of my recipes, but it is optional. Avocado oil not only has a high smoke point up to about 520F, but it also has more of a mild flavor that doesn’t overpower recipes when using. Olive, canola, and vegetable oils have a much lower smoke point at about 400-450F, so no need to worry about harmful oxidation occurring when searing while using avocado oil.

Once the ground turkey is browned, reduce heat to medium and add in onions, zucchini, and bell peppers. Also add in mushrooms as well if using. Stir in basil, oregano, rosemary, thyme, smoked paprika, and red pepper flakes. Continue to cook until onions become translucent and the zucchini and bell peppers start to soften, about 5-10 minutes.

Add in minced garlic and tomato paste, cook for about 1 minute until fragrant stirring frequently. Add water and fresh spinach, stir until combined. Cover and let simmer for 5-10 minutes until vegetables are softened.

Serve over rice or pasta and enjoy!

  1. Reduce heat to medium. Add chopped onion, cut zucchini, and bell pepper to the skillet. Stir in basil, oregano, rosemary, thyme, smoked paprika, and red pepper flakes. Continue to cook until onions become translucent and zucchini and bell pepper soften, about 5-10 minutes.

  1. Add in minced garlic and tomato paste, cook until fragrant stirring frequently, about 1 minute. Add water and fresh spinach, stir until combined. Cover and let simmer for 5-10 minutes until veggies soft.

  1. Serve over rice or pasta.
